Try my homemade Dolce di Poma (apple crisp). It is based on a recipe that Rocky perfected and we enjoy during autumn.

Guido's dolce di poma
  • 5 apples -- 1 each of different varieties such as Honeycrisp, Golden Delicious, Granny Smith, Red Delicious, Fuji, MacIntosh, or any other. The mix of fresh apples is the key to this treat.
  • 1/2 cup flour
  • 1 cup rolled oats
  • 1/2 cup granulated sugar
  • 1/2 cup natural sugar
  • 1 cup light brown sugar
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp apple pie spice
  • 1 tsp cinnamon
  • 1 stick (1/2 cup) unsalted butter, melted

    Preheat oven to 350°F; (180°C)

    Guido's dolce di pomaPeel apples one at a time. Using an apple corer, slice apples and remove core. Feed core to friendly squirrels.

    Cut apple slices into small bite-size pieces being careful to cut away ends if any apple skin remains. Put apple pieces into large mixing bowl.

    Sprinkle with a little lemon juice and mix by hand. Lemon juice prevents the apple pieces from oxidizing (turning brown.)

    After all apples are cut into pieces, mix the pieces of different apples together to distribute the flavors. Be gentle -- don't cause the apple pieces to bruise!

    Add all dry ingredients -- flour, oats, granulated sugar, natural sugar, brown sugar, baking soda, baking powder, salt, apple pie spice, and cinnamon.

    Guido's dolce di pomaUsing a large spoon, carefully mix so the dry ingredients coat all of the apple pieces.

    Melt the stick of unsalted butter in a microwave. Don't boil or burn the butter. Pour melted butter over the apple mixture and mix again to distribute the butter throughout the apple mix.

    Guido's dolce di pomaSpray vegetable spray on inside and top of 8-inch round Pyrex casserole. Transfer apple mixture into casserole.

    Spray the glass top for the casserole and place it on top.

    Put the casserole on the middle rack of the pre-heated oven. It is a good idea to put a large flat round pan like a pizza pan on a second rack under the casserole. This dessert often bubbles over and drips thick goo inside the oven. A pan underneath will save hours of oven cleanup.

    Guido's dolce di pomaThis is how I arranage it in my oven, with a pizza pan under the Poma di dolce to catch any sticky drippings and prevent the oven from getting dirty.

    Bake for one hour (60 minutes). Remove carefully from oven. Allow to cool for two hours before serving. Yum!
