Pani di banana senza glutine e fermento

 

My human is on a gluten-free and yeast-free diet. He wanted a sweet bread that met his dietary requirements. This bread does not have any gluten or yeast, yet rises and is light. Here is my recipe for Pani di banana senza glutine e fermento.

Ingredienti

  • 4 ripe bananas
  • 1/2 cup honey
  • 1 large egg
  • 1 tablespoon grape seed oil
  • 1-1/2 cup brown rice flour (buckwheat or oatmeal flour may substitute)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp ground cinnamon

    Preheat oven to 350°F (180°C)

    Mash the bananas using a potato masher.

    Break the egg into a small bowl, wisk until frothy, add to the banana. Mix with a spoon.

    Add all other ingredients: honey, oil, rice flour, baking powder, baking soda, and cinnamon.

    Mix with a spoon until all ingredients are blended.

    Using a hand mixer on high speed, mix for two minutes until batter is smooth.

    Lightly coat a 4" x 9" bread pan with vegetable oil cooking spray.

    Add batter to pan, smooth so that it is evenly distributed.

    Place in the pre-heated oven. Bake for 50 - 60 minutes or until a toothpick inserted in the middle comes out clean.

    Cool on a wire rack.
